???? Ingredients (Serves 3–4)

For the Paneer:

  • 200–250g paneer, cubed

  • 1 tbsp ghee or oil, for shallow frying (optional)

For the Curry Base:

  • 1 large onion, finely sliced

  • 1 large tomato, chopped

  • 1 tbsp ginger-garlic paste

  • 8–10 cashews (soaked in warm water for 10 mins)

  • 1 tbsp poppy seeds (khus khus) (optional, soaked)

  • 2 green chilies, slit

  • ¼ cup curd (yogurt) – whisked

  • ¼ cup fresh cream or malai

  • 2 tbsp ghee or oil

  • Salt to taste

  • 1 bay leaf

  • 2 green cardamoms

  • 1-inch cinnamon stick

  • 2–3 cloves

  • 1 small star anise (optional)

  • ½ tsp turmeric powder

  • 1 tsp coriander powder

  • ½ tsp red chili powder (or to taste)

  • ½ tsp garam masala

  • ½ tsp kasuri methi (crushed)

1. Prep the Paste:

  1. Blend soaked cashews + poppy seeds + chopped tomato into a smooth paste. Set aside.


2. Cook the Base:

  1. Heat ghee/oil in a pan. Add whole spices and sauté for a few seconds.

  2. Add sliced onions, sauté until golden brown.

  3. Add ginger-garlic paste, cook until raw smell disappears.

  4. Add the cashew-tomato paste, stir well and cook for 5–7 mins until oil starts to separate.

  5. Add turmeric, chili, coriander powders, and sauté for a minute.


3. Add Curd and Cream:

  1. Lower the heat and slowly stir in whisked curd, mix gently to avoid curdling.

  2. Once well mixed, add fresh cream and stir until combined and creamy.


4. Add Paneer:

  1. Add paneer cubes (fried or plain) and salt. Mix gently.

  2. Add ¼ cup water to adjust consistency. Simmer for 4–5 minutes.


5. Final Touch:

  1. Sprinkle garam masala and kasuri methi.

  2. Cover and let it sit for 5 minutes for flavors to settle.

  • Butter naan, paratha, roti, or jeera rice
