Ingredients (Serves 3-4)

  • ½ cup toor dal (arhar dal) or moong dal

  • 2 cups chopped spinach (palak)

  • 1 medium onion (finely chopped)

  • 1 medium tomato (finely chopped)

  • 2–3 garlic cloves (finely chopped)

  • ½ inch ginger (grated)

  • 1–2 green chilies (optional)

  • ½ tsp cumin seeds

  • ¼ tsp turmeric powder

  • ½ tsp red chili powder

  • 1 tbsp ghee or oil

  • Salt to taste

  • 2½ cups water (adjust as needed)

  • Juice of half a lemon (optional)

  • Fresh coriander leaves (for garnish)


Instructions

Step 1: Cook the Dal

  1. Rinse dal well and pressure cook it with ¼ tsp turmeric and 1½ cups water for 3-4 whistles (or until soft and mushy).

  2. Mash the cooked dal lightly and set aside.


Step 2: Make the Spinach Masala

  1. Heat ghee or oil in a pan. Add cumin seeds and let them splutter.

  2. Add ginger, garlic, and green chilies. Sauté for a minute.

  3. Add onions and cook until soft and golden.

  4. Add chopped tomatoes, red chili powder, and salt. Cook until tomatoes turn mushy.

  5. Add chopped spinach and cook for 3-4 minutes until wilted.


Step 3: Combine Dal & Spinach

  1. Add the cooked dal to the spinach mixture. Mix well.

  2. Adjust water for desired consistency and simmer for 5–7 minutes.

  3. Add lemon juice (optional) and check seasoning.


Step 4: Serve & Enjoy

✔ Garnish with fresh coriander.
✔ Serve hot with steamed rice, jeera rice, or roti.


Tips for Best Dal Palak

✔ You can use a mix of dals like moong + masoor for extra flavor.
✔ Add a pinch of garam masala or do a second ghee tadka with garlic for a richer taste.
